Ingredients: 2 Leeks (fresh) or 4 Ready-washed Leeks 3tbs Butter 2 Onions 1 Celery Stick 1 Red Pepper 5 Potatoes (large and peeled) 1tsp Mixed Herbs 1tsp Marjoram 1/2 tsp Thyme 1 Bay Leaf 5cups Chicken Stock(heated) 1/4cup Heavy Cream
Instructions:
1) Cut off and discard green part of leeks(if fresh) 2) Chop up leeks 3) Heat butter in a saucepan 4) Add leeks and onions and celery, seasoning well 5) Partly cover and cook for 15mins 6) Add red pepper and potatoes, mixing well and cook for 3 more minutes 7) Add seasoning(all the herbs) and mix again 8) Pour in chicken stock and bring to boil 9) Cook soup partially covered for 30mins over medium heat 10) Puree saucepan contents 11) Incorporate cream and correct seasoning
